Keeping our energy up and going all day requires a nutrient dense breakfast and some prepared on-the-go snacks we can grab as we head out the door in the morning. Most people will find themeselves grabbing something processed and high in sugar or pulling up to a drive through to satisfy that midday craving. But if we spend a little time preparing some healthy, superfood packed, delicious options that we can take with us, we are set up for success!
The most popular and asked about snack recipe that we’ve shared is our No Bake Energy Balls. In part, because they are SO delicious, but also because they are simple to make and are loaded with protein and superfood nutrients! So if you loved those, then you have to try our SUPERFOOD DATE BALLS. They require no baking, are dairy free, vegan, gluten free, egg free, nut free (although feel free to add almonds or your nut of choice) and you can easily throw these in a bag or jar and have them on hand during the day!
SO LETS GET STARTED
Here is what you will need to make approximately 18 balls.
2 cups pitted dates
1/2 cup sunflower seeds
1/2 cup hemp seeds
1/4 cup dark chocolate chips
1 tbspn cinnamon
1 tbspn cocoa
1 cup of unsweetened coconut flakes (for rolling)
*ADDITIONS feel free to add in chia seeds, nuts, or oats
Next Step is to throw all ingredients in a food processor or high speed blender and blend until it looks like a coarse paste.
Now, for the fun part! Roll into balls. You can wet your hands in between to keep the mixture from sticking to your skin.
Once you have your ‘naked’ balls, roll them in the coconut flakes using a shallow plate or pie dish.
Store the Date Balls in an airtight container or jar in the fridge. Enjoy 1-3 balls for a high energy snack during the day!
